Well world. She’s jumped on that bandwagon. This girl just made quinoa. She is probably make it over and over and over again because it was JUST THAT GOOD. Yep, used a jarred sauce, not usually my thing, but it was just perfect with this! Aspiring to experiment with my own version SOON!
Spicy Chili Thai Quinoa
211 Calories per serving (1/2 cup cook quinoa + 1/4 veggie mixture)
1 cup quinoa
2.5 cup beef broth (or any other broth you have on hand)
1 tbsp olive oil
1 yellow pepper, diced
1 zuchinni, diced
1 yellow onion, diced
1 tbsp freeze-dried garlic or 2-3 cloves fresh,minced
1/4 cup M&M’s Thai Sweet & Spicy Sauce
1/2 cup hot water
Get broth boiling. Add quinoa and turn down to medium-low heat. Cover with lid and simmer for 13 minutes. Turn burner off and let sit 5 minutes.
While quinoa is cooking, chop vegetables and heat pan.
Add olive oil, garlic and onions to pan. Sauté until translucent. (NOTE: Don’t burn your garlic while taking pictures like I did. FOCUS!=)) Once translucent, add water.
Add other vegetables, cooking until softened. There should be some water remaining in pan. If not, re-add 1/2 cup water. Pour in chili sauce.
Serves on top of cooked quinoa.
