Better-Than-Bottled Spaghetti Sauce

Spaghetti Sauce

Serves 6

178 Calories per serving (if using bison, sauce only)


1 lb lean ground meat ( I used bison)

2 tbsp olive oil

1 onion, chopped

3 tsp minced garlic

1 cup water

6-10 roma tomatoes, diced (I used about 8 medium ones which I previously froze)

3 bell peppers, diced

2 tbsp balsamic vinegar

1/4 cup granulated sugar

1 tsp salt

1 tsp black pepper

2 tbsp oregano

1 can tomato paste

1/3 cup chia seeds

In a dutch oven on medium high heat, brown the ground bison with garlic and onion in the olive oil, adding water as necessary to prevent sticking. If using a fattier meat, you may need to drain after this step (as well as skip the water). Bison is naturally very lean and dosen’t leave fat in the pan. It needs water so it dosent burn/stick/dry out.

Once the meat is brown and the onions are translucent, add all other ingredients except chia seeds. Add the water which is leftover from browning. Turn the element down to medium-low heat, cover, and simmer for 45 minutes. 

After 45 minutes you will have a saucy mixture. Taste and add salt and pepper as needed. Add the chia seeds, remove from heat and cover. Let sit 15 minutes. After sitting, the chia seeds should have absorbed much of the excess moisture and you should have a typical sauce consistency.

Enjoy over fresh pasta.
