Egg Nog Graham Crackers

Makes 26 Crackers

3/4 cup whole wheat flour

3/4 cup cake flour

1/2 tsp cinnamon

1/4 tsp salt

1/2 tsp baking soda

1/4 tsp all spice

1/4 tsp nutmeg

1/2 cup butter

6 tbsp packed brown sugar

1 tbsp honey

1 tbsp egg nog

1 tsp pure vanilla extract

Preheat oven to 350 F. Mix flours, baking soda, spices in a bowl and set aside. 

With the paddle attachment in a stand mixer, cream butter, brown sugar, egg nog, and vanilla until fluffy. Add honey. Mix in dry mixture. Do no over mix (this results in tough dough). Mix just until crumbly and combined. Use your hands to form into a ball.

Roll  out dough to 1/8th inch thickness. Cut out shapes with a pizza cutter or cookie cutters. Place onto parchment or silpat lined baking sheets. Put in freezer for 15 minutes.

After 15 minutes, poke holes in crackers with a fork, and put into hot over for 9 minutes.

Let cool on wire rack.
