Italian Fried Rice

Something magical just happened in my kitchen. I went to make some chinese fried rice with leftover brown rice and some random ‘need to be used up’ veggies in the kitchen…realized I had no soy sauce, and it changed into this magical, delicious ‘italian fried rice’. I call it this because it incorporates very italian ingredients such as balsamic vinegar, feta cheese, red onions, and basil! Enjoy.

Serves 2, 276 calories per serving


1 cup cooked brown rice

1/2 cup chopped kale

3 tbsp chopped red onion

1 tbsp minced garlic

1/3 cup shredded carrots

1/3 cup chopped zuchini

1 tbsp balsamic vinegar

1 tbsp olive oil

2 tbsp crumbled feta cheese

sprinkle dry chicken boullion

1 tsp basil, or a bunch fresh leaves (i was just using up ingredients)

1/2 tsp cumin

1 egg

In a hot pan, heat olive oil with onions and garlic until onions are translucent. Add all other vegetables, saute until softened. Add balsamic vinegar. Sprinkle in other spices. 

Make a well in the middle of the veggies. Crack egg into well. Wisk. Once outside of egg is cooked, but center is runny, incorporate into veggies. Add brown rice. Once everything is warm and mixed through, crumble in feta cheese. Serve immediately.
