Vegan S’more Caramel Corn
Makes 8-12 servings
1/2 cup brown sugar
1/8 cup corn syrup
1/4 cup vegan margarine
1/2 tsp baking soda
1 tsp vanilla
6 cups air popped corn
1 cup golden graham cereal
1/2 cup vegan chocolate chips
1 tbsp almond milk
5 vegan marshmellows, chopped into quarters (mini’s would be easier, but I couldn’t find any)
In a large microwaveable bowl, wisk together corn syrup, brown sugar, margarine. Microwave on high for 2 minutes. Add baking soda and vanilla, wisk until foamy. Microwave for another 2 minutes. Pour over popped corn in large bowl. Mix until combined. (Do this quickly as it cools FAST). Pour onto lined baking sheet. Top with cereal and marshmallows. Preheat oven to 350 F. In a small microwaveable bowl, melt chocolate chips an almond milk together. Drizzle onto caramel corn mixutre. Bake for aprox. 10 minutes or until marshmellows begin to soften and melt. Allow to cool for 10-15 minutes. Store in airtight container.
I hate that I totally ate a good quarter of this. So if it is 12 servings I ate 3 servings in one go. Nice! It was too yummy.
