Sweet Chili Tofu with Pineapple Salsa

Makes 4 servings

Aprox. 450 Calories for 1/4 recipe

Tofu:

1 block extra firm tofu, pressed, and thinly sliced into aprox 20 pieces

3 tbsp olive oil

4 tbsp sweet chili thai sauce

Over medium-high heat, fry tofu in oil until crispy and brown. Dry in paper towel. Heat oven to 350 F, toss tofu in chili sauce, bake for 10 minutes on each side.

Rice:

1 Can light coconut milk

1 cup water

2 cups brown rice

In a rice cooker, mix all ingredients and cook for 45 minutes. Let sit 5 minutes before fluffing with fork.

Salsa:

1 cup pineapple, chopped

1 jalapeno, chopped

1/2 red pepper, chopped

1/2 avocado, chopped

Juice of 1/2 lemon

Mix in a bowl.
