Chocolate Coconut Squares

Makes 14 Squares


1 cup graham crumbs

1 cup oreo crumbs

6 tbsp margarine, butter, or coconut oil

1/4 cup maple syrup

1 can light coconut milk

3/4 cup granulated sugar

3/4 cup chocolate chips

3/4 cup shredded coconut

1/2 cup sliced almonds

Line square baking pan with parchment or non-stick aluminum foil. Preheat oven to 350 F. In a large microwaveable bowl, wisk sugar and coconut milk. Microwave for 12 minutes, in 3 minute increments-stopping to wisk- until reduced. Melt margarine and maple syrup. Mix with cookie crumbs. Firmly pat crumb mixture into pan. Pour condensed coconut milk over first layer. Cover with chocolate chips. Sprinkle with coconut and almonds. Bake for 20 minutes. Chill in freezer for 1 hour, or fridge for 3 hours before removing from pan. Slice into squares.
