Vegan Banana Oat Muffins

Adapted from Refresh cookbook

Makes 20 muffins

20-30 dates

2 1/2 cups water

2 tsp cinnamon

2 tsp nutmeg

1 tsp ground ginger

2 tsp vanilla extract

2 cups rolled oats

4 cups cake flour

3 tbsp baking powder

1 tsp baking soda

1 1/2 tsp sea salt

1 cup canola oil

6 over-ripe bananas

In a sauce pan, simmer dates, water, cinnamon, ginger, vanilla, and nutmeg over medium heat for 20 minutes, or until water begins to reduce. Puree in food processor.

Preheat oven to 325 F. Mash bananas. Mix all remaining ingredients in stand mixer. Add date puree. Scoop 1/2 cup into lightly greased muffin tins. Muffin tins will be heaping full, do not be alarmed, they don’t rise a lot.

Bake for 40 minutes. Let cool for 10 minutes before removing from pan.
