One of the things I have missed since becoming vegan is a piping hot, protein rich breakfast in the morning. Tofu scramble serves this now! Delicious and could fool even the biggest egg fans! Tastes like an egg-white scramble!
Makes 2 servings

1/2 block firm tofu (for cubes) or silken tofu, mashed (to make a more ‘egg’-like apperance)
1 tbsp olive oil
1 onion, chopped
2 tsp garlic paste, or 4 cloves minced
1/2 tsp each dried dill, montreal steak spice, tumeric, garlic powder
1/4 cup water
Salt to taste
Heat skillet to medium-high heat. Sautee onion and garlic until soft. Add tofu, cook until begins to stick to pan. Mix remaining spices and water, pour over tofu to release tofu. Simmer until all of the liquid is absorbed into tofu. Serve warm with crusty bread (I toss some crusty french in the oven while waiting for the liquid to absorb).
