Vegan Chocolate Chip Cookies
Makes 29 cookies
1 tbsp chia seeds + 2 tbsp warm water (allow to sit for 3 minutes to turn into an egg-white consistency)
1 cup vegan margarine or coconut oil
3/4 cup white sugar
3/4 cup brown sugar
1 tsp vanilla
2 1/2 cup cake flour
1 tsp baking powder
1 tsp salt
1 bag of vegan chocolate chunks or chips (we used half and half)
Preheat oven to 375 C. Cream sugars, chia egg, vanilla in electric mixer. Add flour, salt and baking powder. Combine until creamy. Hand mix-in chocolate. Drop rounded tablespoon-fuls of dough onto silpat or parchment-lined baking sheet. Bake for 10-12 minutes, or until golden around edges. Allow to cool on pan for 3 minutes before transfering to wire rack to complete cooling.
